Abstract

This paper describes the project (PRIN 2017) titled Atlante della lingua e dei testi della cultura gastronomica italiana dall’età medievale all’Unità (AtLiTeG). The project aims to reconstruct the history and the geography of Italian culinary texts and their language from the Middle Ages to the unification of Italy. The project consists of the following three main parts: the database/textual corpus (i.e. the verification of the sources with the analysis of the textual traditions through the drafting of new philologically reliable editions); the VoSLIG (Vocabolario storico della lingua italiana della gastronomia); a geotextual atlas which will collect the chrono­logical and geolinguistic representation of culinary terms from the Middle Ages to the unification of Italy in the form of a linguistic-georeferencing atlas, with a distinction between centres of production, texts and traditions for historical phases.
