Abstract
LEARNING OUTCOME: To demonstrate how food labeling programs have impacted consumer's food choices. In May 1994, the FDA changed the food label on food products. Given this change there has been need to provide new and up-to-date information to consumers about nutrition and label reading. An educational program was developed and used with various groups in Ohio such as paraprofessionals, health educators, teachers, consumers, low, medium and high income families, recovering substance abusers and WIC program participants. This innovative program has been taught to over 1,000 individuals from diverse backgrounds. This educational program has had measurable impact on the participants. Using a pre/post testing format, we found that 86% increased their knowledge of nutrition and the new food label. Three month follow-up evaluation revealed 96% of the respondents are READING food labels more often, 93% have used the new food label to select healthier foods, 92% find the new label easier to understand since attending the program on the new food label and 96% of the participants pay more attention to the amounts of fat and cholesterol in the foods they purchase.
