Abstract

This study aims to determine the process of tofu processing: a case study of the tofu industry in Kabangka District, Muna Regency. This type of research is descriptive qualitative research. The examination conducts the tofu industry in Wakobaloagung Village, Kabangka District, Muna Regency. Data was collected using the following methods: (a) literature study, (b) interviews, (c) observation, and (d) documentation. The results showed that the tofu production process in the tofu industry business, even though the processing process was still simple technology, including (a) basket tools, (b) filter cloth, (c) grinding machine, (d) tub to accommodate tofu slurry, which has is founding, and (e) the weights of the concrete blocks. Tofu processing includes: (a) preparation, (b) soaking and washing, (c) milling, (d) cooking, (e) tourism, (f) printing, and (g) cutting.
