Abstract
Snakehead fish is currently used by the public as a health treatment because it has a higher content of albumin protein than others. The Research aimed was determined the protein quality and comparison levels in two species of snakehead fish, Channa striata and Channa micropeltes, derived from Bogor Regency. Protein concentration level of C. micropeltes and C. striata after drying for five minutes as much as 0.830 mg/mL and 0.803 mg/mL and these concentration were higher than dried for 10 and 15 minutes. Protein concentration levels of the two species were not significantly different. The molecular weight of albumin protein from both species were 65.56 kDa to dried for five minutes, 65.08 kDa to dried for 10 minutes, and 64.91 kDa to dried for 15 minutes. The Results concluded that there were no differences in protein levels in the fish meat and skin of the two species. Drying treatment affects the molecular weight of snakehead fish albumin protein.

September 2019 Vol 20 No 3 : 436-444 atau ikan asin (Nurbakti dan Septyan, 2009). Sepanjang Tahun 2012, jumlah ikan gabus (C. striata) yang dihasilkan dari budidaya kolam di wilayah Kalimantan sebanyak 420 ton, dari budidaya karamba sebanyak 5.895 ton, dan dari perikanan tangkap sebesar 18.269 ton (KKP, 2014). Ikan gabus dimanfaatkan dalam bidang kesehatan yang disebut sebagai medicinal freshwater fish, seperti digunakan untuk mempercepat proses penyembuhan luka pascaoperasi dan melahirkan (Rahayu et al, 2016). Ikan gabus mengandung asam amino dan asam lemak dengan kadar yang tinggi dan memiliki kemampuan bagus dalam proses penyembuhan luka (Shafri dan Abdul, 2012). Menurut Mat-Jais (2007), ekstrak daging ikan gabus mengandung asam amino dan asam lemak yang penting dalam sintesis serat kolagen, terutama glisin, selama proses penyembuhan luka. Albumin ikan gabus sangat baik digunakan untuk penderita hipoalbumin (rendah albumin), dan penyembuhan luka pascaoperasi dan luka bakar (Evi dan Ika, 2013). Kandungan albumin pada daging ikan gabus berdasarkan hasil dari beberapa penelitian ternyata dipengaruhi oleh pakan, jenis kelamin ikan, daerah yang berbeda atau beberapa kondisi lainnya. Hasil penelitian ini memberikan penjelasan yang bermanfaat dalam pengembangan potensi bagian tubuh ikan gabus untuk pengobatan
