Abstract

Write a summary and analysis of the pattern of changes in dietary structure and esophageal cancer risk factors in the Chinese population during the previous ten years. Analyze the association between the trend of esophageal cancer changes and dietary structure in the Chinese population by compiling statistics on the consumption of different foods by Chinese residents over the course of two time periods in the previous ten years. Residents' dietary patterns have changed significantly, with a rise in the consumption of beef, lamb, chicken, salt, and edible oil, while a decrease in the use of grains. The incidence rate and mortality of esophageal cancer have decreased in China over the past few decades, but the number of new cases and fatalities is gradually increasing. In order to reduce the occurrence of esophageal cancer, active intervention is needed to change residents' eating patterns. eating structure is intimately linked to the development of tube cancer.
