Implantacion de la trazabilidad y su relacion con la calidad: marco conceptual y retos estrategicos. Aplicacion al sector pesquero

Abstract

The aim of this paper is to propose a conceptual framework that allows implementing a traceability system in fish sector and getting the maximum benefits. The conceptual framework proposed is based on the creation of networks between actors along the value chain. The creation of these networks would not only facilitate value chains with high levels of security but also would inform the consumer about the relevant intrinsic properties that provide the product quality (e.g origin). Regarding the signaling of traceability, clear, credible and easy to use informative signals need to be implemented. Finally, it is neces-sary to improve the process of authentication or verification of intrinsic properties at critical points of the value chain.
