David Herbert – a co-owner of Phoenix Food & Beverage Ltd who will open a new fi nedining restaurant and destination bar and operate the food & beverage services at The Montcalm in London when it re-opens this August as a fi ve-star hotel. He is a former Director of London Fine Dining Group where he was responsible for the operations, marketing and development of six fi nedining brands including Aubergine, Zafferano and Ken Lo ’ s Memories of China.
