Abstract

Abstract European explorers landed on the shores of the new world and struggled to survive in a new and hostile landscape. Friendly Native Americans shared their vast knowledge of survival with these Europeans on day-to-day living that included food sources. One valuable Native American food source was apios. It was also used as a token of trading. Apios was found along numerous stream and riverbanks in eastern North America. Apios, otherwise known as earthnuts, potato bean or groundnuts, is an excellent source of protein containing three times the crude protein content of the Irish potato (16.5% of dry weight). Seeds may have as much as 25-30% crude protein. Folklore suggested that apios tubers have medicinal properties. Advanced germplasm developed at Louisiana State University had been evaluated, and it was discovered that various advanced lines contain high levels of the isoflavone genestein. Evidence suggests that the dietary isoflavones found in apios are of significant amounts and may prevent breast and prostate cancer.
