Abstract

Good hygiene practices of fresh fruit are usually evaluated using a checklist of established concepts of food safety. In Chad, no checklist is available to monitor good hygiene practices and face health risk factors. The development of a checklist is a context-specific process complicated by the lack of specific information and the social, economic, and environmental reality in the hot and tropical climate of Chad.
