Abstract

A model for coupled heat and mass transfer for self-freezing in a porous matrix is set up and solved. A stability criterion for the phase interface is linked with well-known parameters like under cooling and freezing rate. It is shown that heat and mass transfer balance at the interface can affect stability. The effect of parameters on freezing and sublimation rates is examined. Applications in food processing, freeze drying and temperature control of buildings are possible.
