Abstract

The physicochemical characteristics and aroma components of the fruits may differ significantly depending on the ecology in which they are grown. In this study cherries grown in different locations in Turkey were characterized and their physicochemical properties and aroma components were compared according to the locations they are grown. 0900 Ziraat variety cherries grown in Akşehir district of Konya province, Kemalpaşa district of İzmir province, Salihli district of Manisa province, Yeşilyurt district of Malatya province, Uluborlu district of Isparta province were used in the study. In terms of fruit width and fruit weight, cherries grown in Salihli location are larger than others; For the color values, it was determined that the dark red color of the cherries grown in the Yeşilyurt location differentiate them from the cherries grown in the other locations. Total acidity was highest in Kemalpaşa location and total soluble solis content was highest in Salihli location. Aroma components with fruity and floral notes were found in high quantities in cherries grown in Yesilyurt location. As a result it is determined that the locations which cherries are grown has a high level of influence on various quality characteristics.
