Abstract
One of the factors that influences the quality of duck eggs is the rearing system. This study aimed to determine the exterior and interior quality of Peking duck eggs produced by the Monggelemong Duck Farmer Group, Dasan Cermen Sandubaya, Mataram. The eggs were obtained from members of a group of farmers who are members of the Monggelemong Duck Farmer Group. Egg collection is carried out in turns every day for each member of the farmer group by randomly taking 10% of the total egg production so that 170 eggs are collected. The quality of the eggs was then measured at the Laboratory of Animal Products Processing Technology, Faculty of Animal Science, University of Mataram. The research results concluded that the internal quality of Peking duck eggs produced by the Monggelemong Duck Farming Group was categorized as excellent grade (AA grade), but with low external quality.
