Abstract

As protein hydrolyzates, e.g. mixtures of polypeptides, and their acylated products are capable of modifying the surface properties of liquids, such compounds are of interest in emulsification processes. Because of the different molar masses in such products the calculated HLB-values are not useful for describing such systems. The coalescence behaviour of oil droplets which are separated by a thin film of aqueous solution from such substances was therefore studied in comparison with other surfactants.
