Abstract

Fruit metabolic profiles indicate ripening stage, cultivar, phenotyping, and abiotic and biotic injuries, therefore constituting fruit quality parameters that are particularly important for the food industry. NMR-Metabolomics has been a powerful tool for studying metabolites and their biological processes. The fruit metabolic profile has been determined using NMR by several research groups worldwide. The present work aimed at compiling and organising the scientific literature on the metabolomics of fruits analysed by NMR, focusing on the botanic families. The scientific records related to the metabolomics of fruits were obtained from the Microsoft academic graph. Additionally, network science tools of clustering and topic modelling were used to analyse these data and identify the subjects of the papers. The results indicated that the most common botanic family studied is the Rosaceae family, which are the main commercial European fruits. By studying the scientific literature, it was possible to observe relationships among the taxonomy of fruits, their chemical compounds, and the scientific literature.
