Abstract

The tubers quality assessment and indicators are presented in the article. The world experience of electron-optical methods using for instrumental diagnostics of potatoes ripeness and commercial quality, the feature of which is to determine the tuber quality without violating its physical integrity, is described. A brief description of each group of electro-optical methods is given. The use of combined methods is proposed to increase the accuracy of tubers sensing, in particular, when creating multi-parameter sorting devices. Due to the complexity of the potato sensing process, software and hardware are required, designed on the principle of the biological neural networks organization and functioning.
