Abstract
Tubers of potato cultivars Jaerla and Desiree were harvested in three successive years and the relationship between dry matter content and peroxidase activity of the sprouts and physiological ageing of the tubers during storage at 4 and 12°C was investigated. Dry matter content and peroxidase activity showed a good correlation with decreased sprouting capacity and incubation period.
