Abstract
The C2H4 treatment induced the occurrence of bitterness and the brown pitting injury in partially processed carrot (PPC) during storage at 20 °C.The pitting injury was more apparent in the inner-phloem than in other tissues. Untreated PPC did not show apparent changes of o-diphenols and isocoumarin. The accumulations of o-diphenols and isocoumarin were greatest in outer- and inner-phloem and were followed by the cambium, cortex and xylem of treated PPC. The C2H4 treatment induced the apparent decrease in non-reducing sugar and the increase in reducing sugar of all tissue.
