Abstract

IT has been stated that diets with high phosphate, phytate and low calcium content affect iron absorption by precipitating the iron as an insoluble iron phytate or phosphate; and that this might be a factor in the etiology of the widespread and severe iron-deficient anaemias of the tropics1–6. It is known that bulk has a deleterious effect on iron absorption.
