Abstract

The complex relative dielectric function e *(ω) = e′ − je″ of coconut water and distilled water in the frequency range 20 Hz to 2 MHz at different temperatures (303 to 333 K) were measured using a precision LCR meter. The electrical/dielectric properties of the liquid samples were represented in terms of complex relative dielectric function e *(ω), complex ac conductivity σ*(ω), and complex impedance Z *(ω). All of these presentations were used to explore various processes contributed in the electrical/dielectric properties of the coconut water and distilled water.
