Abstract

The research is focused on the service quality of fresh meat cold chain in the context of the whole system, and it studies the key factors which affect the service quality of fresh meat cold chain from the perspective of quality management. The research aims to establish an evaluation system, describing the inner rules of the service quality management in fresh meat cold chain logistics, providing support for both service quality evaluation of fresh meat cold chain logistics and standardization of cold chain logistics service in China. Fresh meat cold chain logistics service has not only the general characteristics of logistics service, but also its own particularity, all the links are limited and affected by its logistics object. 2.1 Factors Affecting The Quality of Fresh Meat Fresh meat undergoes a series of chemical, physical and enzymatic reactions before being consumed, which will cause the decrease of its quality. At present, scholars from home and abroad generally study factors that affect fresh meat quality in terms of genetics and animal breeding.
