Abstract 'Standard' cooling models of neutron stars are obtained by solving exactly the fully general relativistic version of stellar structure-evolution equations, with the best physical input currently available. It is found that for medium to stiff equations of state, it takes 1000-100,000 yr to reach the isothermal state. These time scales would be considerably longer than the ages of most young supernova remnants. Therefore, cooling models obtained with the 'isothermal method' would be inadequate when theory is to be compared with the greatly improved observational data. Interesting results obtained by comparing these theoretical models with the Einstein data of young supernova remnants are reported. For the Vela pulsar, these comparisons may suggest enhanced cooling through the presence of 'exotic' particles.
