Abstract

A comparative study was made of macromolecular conformations of amylose V and B in DMSO solution. It was established that structural differences between amylose V and B are considerably reduced in DMSO. In dimethylsulphoxide solutions amylose macromolecules, independent of the type of initial structural modification, acquire the shape of a statistical sphere without forming helical structural fragments. For amylose macromolecules in a mixed DMSO-water solvent the existence of a sphere-helix conformation transition was established. It was shown that the transition of amylose macromolecules to helical conformation may be determined by spectroscopic and thermo-chemical methods.
