Abstract

Produziram-se biomassas dos cogumelos comestíveis Pleurotus ostreatus, Lentinula edodes e Auricularia auricula-judae em cultura submersa, utilizando-se soro de leite (meio de cultivo) como fonte nutricional. Os cogumelos foram avaliados quanto à sua composição de ácidos graxos pelo método de cromatografia de fase gasosa para ésteres metílicos. As biomassas foram caracterizadas pelo alto conteúdo de ácidos graxos insaturados, predominando os ácidos oléicos e linoléicos.
