Abstract

Some differences in physico-chemical properties between the starch granules of Native Rice and Ponlai Rice have been found; The protein content and amylose content of Native Rice starch are higher than that of Ponlai Rice. They exhibit different types of gelatinization curves. The effect of protein distribution and that of amylose content on the physical properties of rice starch granules has been discussed.
