Abstract

The effect of coating made from Salvia macrosiphon seed (SSG) incorporating liquid smoke (LS) with UV-B irradiation on the physicochemical and sensory properties of button mushrooms at 4 ± 1 °C for 14 days were evaluated. After 14 days of storage, the SSG/LS coating with UV-B significantly delayed weight loss, total soluble solids, softening, and browning in mushrooms compared with the control. The microbial growth was best controlled by SSG/LS coating with UV-B, while the control led to a significant increase in the microbial counts. The treated samples had significantly higher total phenolic content compared to the control throughout storage. The treatment with 30 min of UV-B irradiation was effective for button mushrooms as it resulted in a significant increase in the vitamin D2 level in samples. The results suggest that the SSG/LS coating with UV-B irradiation could be a promising method for preserving button mushrooms and enhancing their shelf life.
