Abstract

Teaching Factory is a concept of a production-based teaching process that refers to the standards and procedures applicable in the industry, which is carried out in an atmosphere like what happens in the industry. One of the Teaching Factory in Jember State Polytechnic majoring in Agricultural Technology is the Teaching Factory Canning (Canning Factory). The fish canning product produced at the Teaching Factory Canning, Jember State Polytechnic is canning lemuru. The raw material for lemuru fish is obtained directly from fish collectors in Puger. Tefa Canning Jember State Polytechnic only has 1 medium flavor variant, namely medium chili sauce with tomato paste as the main ingredient. However, the use of tomato paste is considered less cost-effective, because the price of tomato paste is not cheap. This is why the researchers tried to create a new variation medium with the addition of maltodextrin, which is expected to reduce the cost of production (Cost of Production) of lemuru fish products in cans at Tefa Canning Politeknik Negeri Jember
