Abstract

Fish processing generates large amounts of residues that are destined for nonfood uses. Fish and fish wastes products are highly nutritional yet are susceptible to spoilage. This chapter elaborates on using mechanical separation of fish meat to develop and manufacture ready-to-eat (RTE) products of quality nutritional value for human consumption and evaluate their chemical stability. Mechanical separation of fish meat from waste processing presents a sustainable and alternative way of manufacturing RTE products for human consumption, considering its social, economic, and environmental benefits. RTE fish products from fish waste processing will meet the needs of current consumers that are in high demand for healthy food products. Therefore the food processing industry must acquire the knowledge and skillset to fully incorporate this technology in manufacturing shelf-stable and healthy products for consumers.
