Abstract

In this chapter, I use insights from the health promotion literature to structure an investigation of how to encourage people to make sustainable food choices, such as reducing meat consumption, eating organic foods and eating locally grown foods. I focus on four commonly used approaches in health promotion, namely, information and education, food labelling, nudging and pricing. Using illustrative empirical findings from both the health promotion field and from environmental psychology, I explore the possibilities for encouraging people to eat (more) sustainably.
