Abstract

A gradual increase in consumer demand and priority for eco-friendly packaging, has encouraged researchers’ interest toward sustainable changes in terms of packaging materials which serve both as a marker for the quality of food and sensory characteristics, respectively. Keeping in view the requirement of the current scenario and consumer preference for quality packaging, scientists have introduced antimicrobial agents into edible films coated with biopolymers, which aims at killing and inhibiting the pathogenic microbes that cause food spoilage and contamination. In addition, it can also reduce undesirable odors/flavors. The bio-based antimicrobial coating has been enhanced with nanotechnological aspects such as nanoencapsulation and bionanocomposites. This chapter focuses on the associated research and its implementation for developing nanobio-based packaging systems which provide long-lasting flavor and quality.
