Abstract

Modern soybean processing consists of a series of unit processes that in total determine the costs of processing and quality of final products. This chapter reviews a sequential discussion of each unit process and outlines the processes employed and their interrelationships and interdependencies. Modern emphasis in soybean processing has tended to concentrate on energy conservation and savings, increased production, and environmental considerations. These are real-world concerns and merit emphasis, but not at the expense of the basic technical goals in processing. The overall technical goal should be production of products of acceptable quality. Such production should be at the lowest possible cost that allows meeting the first goal.
