Abstract

The production of commercial probiotic beverages in China was rather late compared to other countries, although in certain regions of China people have a long history of consumption of traditionally fermented beverages. According to a recent survey, probiotic beverages have gained significant traction in China's beverage market. Probiotic products, including fermented foods and beverages, have ranked in China's top 10 food trends since 2016. The research focus of fermented fruit and vegetable juice beverage products is about technology and the craft of strain fermentations, which are concentrated in three aspects: the breeding of fermentation strains, optimization of fermentation technology, and flavor modification. Probiotics are widely accepted in China and new probiotic beverage products are continually being developed and introduced into the market.
