Abstract

The agro-industrial production process generates large volumes of agro-food by-products, which have acquired great importance due to their bioactive compounds. Indeed, during the processing, the loss of specific compounds is related to their partitioning between food and by-products. Among these compounds, phenolics have drawn scientific interest due to their bioactivity on different diseases and prompted multidisciplinary research on chemical characterization. The present chapter focused on different agro-food by-products as polyphenols sources aimed at utilizing wastes generated by the manufacturing process flow chart through promoting their overall sustainable recovery and the development of potential functional ingredients.
