Abstract

Syzygium aromaticum (clove) essential oil (CEO) has a variety of biological activities owing to its effective chemical constituents such as phenolic compounds and flavonoids. The main compound with the biological activities of CEO is eugenol, in addition to eugenol acetate, β-caryophyllene, α-humulene, and other constituents. Accordingly, CEO has significant properties as antibacterial, antifungal, antiprotozoal, insecticidal, antioxidant, and many other assets for improving human health and immunity. This chapter sheds light on the medical and health importance of CEO in terms of its activity on pathogenic organisms and its ability to counteract them, in addition to its ability to increase the body’s immunity to confront diseases.
