Abstract

Ginseng is known as the king of herbs because it is used as a health tonic for the treatment of childlessness, liver disease, memory loss, colds, menopause, and erectile dysfunction as well as being used to empower weak bodies. Ginseng plant holds an amazingly complex mixture of chemical components that can vary from specie to specie, growing conditions, and place of origin. Panax ginseng exhibits various classes of biologically active components, in addition to ginsenoside, such as sesquiterpenes, phenolic compounds, and polyacetylene, which shows antioxidative and anticancer potential. Meanwhile, recent studies are actively investigating polysaccharides with respect to immune-related functions. Studies on the functionality of major active components such as ginsenoside and on the improvement of substance content and functionality through puffing, acid treatment, and high heat treatment have been widely conducted.
