Abstract

Citrus fruits are one of the most popular fruits in the world. They represent an important part of our daily diet not only because of the good taste, but also because of their high nutrition values and health benefits. It is well established that the consumption of citrus fruits reduces the risks of lifestyle-related diseases, such as cancers, cardiovascular diseases, and diabetes. In these fruits, high amounts of bioactive compounds are accumulated in the peel and pulp. Recent studies have documented that the health benefits of citrus are largely due to the bioactive compounds found in their fruits. In this chapter, the major bioactive compounds, carotenoids, flavonoids, and ascorbic acid (vitamin C), in citrus fruits are introduced, including their accumulation, metabolism mechanisms, and the health benefits.
