Abstract
Pineapple fruits are harvested when they have reach full-size, have some degree of skin yellowing and a good balance of sugars to acids. For Smooth Cayenne varieties flatness of eyes is also a criteria. Mechanical injury, translucency, chilling injury, and postharvest disease are the main causes of postharvest losses. As a nonclimacteric fruit response to CA and MA are small and frequently do not warrant the expense and this is borne out by the numerous trials carried out by the large growers and shippers. Fruit bagging and selected fruit coatings have shown considerable ability in reducing chilling injury symptom development with coating being most commonly used. In this chapter the published data on use of CA/MA for pineapple postharvest is discussed.
