Abstract

Quercetin is a polyphenol belonging to the class of flavonoids. Quercetin is subclassified as a flavonol that is found in different types of plants. Quercetin has a broad range of biological activities including antioxidant, analgesic, antiinflammatory, cardio- and neuroprotective, and antiallergic. However, quercetin’s low solubility in water and bioavailability have limited its clinical use. In this chapter, we discuss isolation and purification methods, metabolism, and distribution of quercetin, evidence on the wide range of quercetin effects, focusing on its structure-activity relationships. Data on clinical trials regarding this flavonol are discussed. We highlight strategies including new pharmaceutical formulations used to improve quercetin bioavailability and stability. Special attention is paid to the therapeutic potential of quercetin at the management of inflammation and pain, as well as its mechanism of action, and, ultimately, how flavonoid-based therapies can be used for the treatment of inflammatory diseases.
