Abstract

Evaporation and distillation are processes that use heat to remove water and/or more volatile components from liquid foods by exploiting differences in their volatility. The chapter explains the theory of evaporation and describes the equipment and methods used to produce concentrated and distilled products. Both operations are energy-intensive and the chapter describes methods used to reduce energy consumption.
