Abstract
Agriculture has always been a deciding factor for governments and food quality monitoring is considered critical, as it directly influences food security, health care, environmental impact, and economic issues. With rising concerns over global warming, unpredictable climatic changes, sociopolitical issues, and increasing standard of living of people, the need for monitoring food quality has increased ever before. For successful and effective monitoring of food quality, food sensors capable of effective, rapid, and cost-effective sensing were required; however, it is not easy, as the food matrix is a cocktail of interferents and contaminants. This chapter discusses the recent advancements in the field of sensors for monitoring food quality.
