Abstract
The present chapter reviews the major properties reported for a group of compounds called pectins and most of their applications in human health. Pectins constitute a high proportion of agricultural and agroindustrial waste composition. Briefly, a list of multiple applications and benefits to human health from pectins and their derivatives is presented, emphasizing the structure–function relationship and the potential they represent in many biomedical applications.
