Abstract

Berries are a promising source of bioactive compounds, such as polyphenols, which has potential positive biological impacts on human health. For the industrial application of berries-derived bioactive compounds, understanding in the extraction methods as well as the stability of the molecules is highly important. This chapter, therefore, discusses advance extraction techniques, including microwave- and ultrasonic-assisted solvent extraction, together with the factors affecting the extraction efficiency, specifically the type of solvent, material–solvent volume ratio, pH, and temperature. Factors affecting the stability of the bioactive compounds followed by the methods for stability assessment are covered in this chapter.
