Abstract

The basic anatomy of the gustatory system and its relation to feeding and drinking behavior is discussed. The projections of the peripheral gustatory nerves and the central taste pathways are described. The functional contributions of taste signals to ingestive behavior such as stimulus identification, ingestive motivation, and digestive preparation are defined. The distinction between hindbrain and forebrain taste processing is examined, with an emphasis on experimentally popular and theoretically relevant behavioral models such as conditioned taste aversion and sodium appetite.
