Abstract
SummaryThe catabolism of ascorbic acid in animal tissues has been studied using rat and guinea pig liver homogenates in vitro. It has been shown that ascorbic acid is oxidized to its dehydro form by a heat-stable, non-enzymatic factor in the insoluble portion of liver. Dehydroascorbic acid is then further degraded beyond the diketogulonic acid stage by an enzyme system in the soluble portion of the liver.
