AbstractThe first proton and 13C nuclear magnetic resonance spectra of single wheat variety gliadins in solution are presented and assignments of the resolved 13C lines are proposed by comparison with the chemical shifts of the constituent amino acids in solutions. Proton magnetic resonance spectra are also presented for an extract of total wheat protein and partial assignments are proposed for these complex biochemical preparations. Further experiments on these materials of considerable practical importance are suggested and the non‐destructive character of the techniques is pointed out in relations to monitoring changes in protein conformation.
