Abstract

The study aims to find the added value of agricultural manufacturing (bakeries and ovens) in Nineveh Governorate for the year 2020, Calculating costs, revenues, profits, total and net added value, and identifying consumer preferences, The study relied on the primary data collected through a questionnaire for a random sample of (18) bakeries and bakeries operating in Nineveh Governorate for the year 2020, and (207) questionnaires distributed to consumers in the governorate to identify consumers’ preferences and the quality of products produced by bakeries and ovens. The results of the study indicated that the average gross and net added value amounted to (929,484,145, 920,546.790) dinars / ton, respectively, and the average profit per ton was (786802,320) dinars / ton. The total costs, and the costs of buying flour, family work, fuel and oils ranked (first, second, third) in order from the total costs, the lack of support provided to bakeries and ovens by the government for flour and fuel, which constitute the highest percentage of production costs. The results of the consumer sample questionnaire form showed that (47.342%) of the sample used bread and butter during three meals a day, and that (55.555%) of the consumer sample Would you rather make bread at home and that (43.478%) of the consumer sample prefers to use local flour over imported, The study recommended supporting bakeries and bakeries by providing zero flour and fuel, Setting quality specifications and standards for the bread and baking industry and working to implement them in order to raise the competitive advantage of these necessary food products for the Iraqi individual.
