Abstract

The article presents the results of analysis of data from open sources and literature on the assessment of diets in preschool educational institutions in Moscow. It was found that for the period 2010–2015 and as of 2019, the change in food standards did not lead to a significant change in the quality of food and the number of basic food components, since the decrease in the norms of individual products is compensated by an increase in the norms of other products and the introduction of new products. However, problems in the field of catering in the DOE exist and are related, among other things, to the poor quality of outsourcing services by suppliers of ready meals and food products.
