Abstract
Introduction. Consumer market development trends are investigated in the article; the problems of qualitative and quantitative characteristics of food products of domestic and foreign producers are considered; the influence of vitamins and trace elements on the human body is characterized; factors that influence the decision to purchase juice are analyzed. The study of patterns and trends in the development of the consumer market in the food technology environment is an extremely important task. This is due to the fact that the key interests of the population and producers of final products are intertwined in this market. The purpose of the paper is urgency of the problem is increasing in the context of restrictions on the use of primary energy sources, increased competition in the market of products, deterioration of raw material flows. Results. Despite the fact that in recent years the Ukrainian consumer prefers domestic product and manufacturer, it seems that the state and domestic business do not care about the quality of their product, ignoring it as a criterion. In contrast to European countries, the main criterion for business and consumer is not the quality of goods in general and food in particular, but price. Using the theory of fuzzy sets, the issues of harmonization of contradictory criteria, creation of logical regulators of systems are solved. Fuzzy sets make it possible to apply linguistic descriptions of complex processes, establish fuzzy relationships between concepts, predict system behavior, formulate multiple alternative actions, perform formal descriptions of fuzzy rules. Conclusion. A well-designed and organized system can and should ensure high quality and safety of food products in the food technology environment, conditions for increasing mutual trust and creating a civilized market in Ukraine.
