Abstract
Objective:To explore the antioxidant activity,moisture-absorbing and moisture-retention properties of collagen peptides from different sources.Methods:The antioxidant activities of collagen peptides from different sources were evaluated by determining their scavenging activities on 2,2-diphenyl-1-picrylhydrazyl(DPPH) and 2,2'-azino-bis-2-ethybenz-thiazoline6-sulfonic acid(ABTS+) free radicals and their reducing power.Results:The collagen peptide from donkey revealed the strongest scavenging activity on DPPH free radicals with IC50 of 0.63 mg/mL.The collagen peptide from Alaska pollack skin exhibited stronger scavenging activity on ABTS+ free radicals with an IC50 of 0.12 mg/mL.Meanwhile,the collagen peptide from donkey also exhibited the strongest reducing power,which was 0.61 at the concentration of 10 mg/mL.The moisture-absorbing and moisture-retention rates of collagen peptide from donkey were 10.17% and 98.90% under the relative humidity of 43%.Conclusion:The collagen peptide from donkey can be used as a good additive in functional food and cosmetics.
