Abstract

The antigenicity of the major whey proteins and of casein in a variety of infant milk preparations has been measured by the precipitin ring and by the passive cutaneous anaphylaxis tests. All milk formulas showed casein, alphalactalbumin, and beta-lactoglobulin activity. Some products also showed bovine serum albumin activity. It is suggested that the term “heat denatured milks” be abandoned as a designation implying nonantigenicity or nonallergenicity of the proteins in processed milk preparations. The data suggest that the use of heat modified milks in the diet of patients allergic to casein, alpha-lactalbumin, or beta-lactoglobulin is contraindicated.
