Abstract

Anthocyanins, a subgroup of water-soluble flavonoids which occur naturally in the plant kingdom, are responsible for many of the colors observed in nature. Studies have demonstrated that anthocyanins can help in the prevention of cardiovascular and neurological diseases, cancer, and inflammation (Konczak and Zhang in J Biomed Biotechnol 5:239–240, 2004).
